Brunch Horsd’oeuvers

 

·       French Toast Cups- mini cups of challah bread, fresh rasberies, pistachios and our creole coconut custard, topped with powered sugar and maple syrup.

 

·       Mini Chantilly pancakes- fluffy pancakes with lemon zest. Serves with Chantilly Cream, fresh berries and maple syrup.

 

Premium Brunch Horsd’ovuers

 

·       Bananas Fosters French Toast Cups- our French toast cups get topped with New Orleans’ most decadent dessert. A match made in Nola Heaven. 

 

 

·       Shrimp and Grits Cups- creamy herb corn grits, gulf shrimp in a creole cream sauce.

 

·       Catfish and Grits Cups- crispy fried catfish, creamy herb corn grits topped in a creole cream sauce.

 

·       Buttermilk Fried Quail and Mini Waffles- local honey, mini peppers.

 

·       Crab cakes and Fried Green Tomatoes- jumbo lump crab meat, creole spices, topped with a honey horseradish aioli and micro greens.

 

·       Mini Muffelattas- a traditional New Orleans sandwich, served warm with olive salad and spicy creole mustard.

 

·       Fried lobster lollipops and Waffles- served with cayenne honey butter

Evening Horsd’overs

 

·       Wedge Salad Skewers- crispy bacon, blue cheese, cherry tomatoes, croutons with buttermilk ranch.

 

·       Caesar Salad Skewers- Croutons, shaved parmesan.

 

·       Barbeque Shrimp- served with a crostini

 

·       Seafood Gumbo- shrimp, sausage and chicken in a rich roux. Topped with jasmine rice and lump crabmeat.

 

·       Chicken And Sausage Gumbo- topped with jasmine rice.

 

·       Crab cakes and Fried Green Tomatoes- jumbo lump crab meat, creole spices, topped with a honey horseradish aioli and micro greens.

 

·       Toulouse Spinach & Artichoke Dip- our take on a tradition dip, kicked up with gulf shrimp, crawfish and lump crabmeat. Served with tortilla chips in mini cups with shave Parmesan

 

·       Southern Cigars- an awesome bite of comfort food. Pulled BBQ Chicken, Collards, Cabbage and sweet potatoes rolled into an eggroll. Served with our Southern Comfort Honey Chipotle sauce.

 

·       Mini Crawfish Monica Cups- creamy crawfish sauce tossed in your choice of linguine or rotini pasta.

 

·       Eggplant Napoleon Stack- Panko fried eggplant, gulf shrimp, creole cream sauce.

 

·       Mini Chicken Bruschetta- fresh mozzarella, grilled chicken, blistered cherry tomatoes, basil drizzled with a balsamic glaze.

 

·       Crawfish Empanadas- crawfish pie made portable in a crispy and flaky empanada dough. Served with out zesty tiger sauce.

 

·       Mini Boudin Corndogs- mild or spicy, served with our creole honey mustard.

 

·       Shrimp Corndogs- light and crispy battered gulf shrimp, with our tiger sauce for dipping.

 

·       Asian Almond Shrimp- large buttermilk fried shrimp, slivered almond, Asian slaw with a Zea’s signature glaze.

 

·       Nola-Lote- a creole twist on a traditional Latin standard. Grilled corn, Cojitia cheese, spicy creole mayo, parsley.

 

·       Crab Beignets- lump crabmeat, shallots, mascarpone in a tempera batter. Served with a roasted garlic aioli.

 

·       Dauphine Deviled Eggs- fluffy yoke mousse, topped with a fried oyster, caviar and chives.

 

·       Frenchmen Fondue- shrimp, crawfish, lump crabmeat with baguette slices

·       Peach cobbler- fresh peaches, cinnamon, and amaretto, flaky crumble served warm with vanilla ice cream

 

·       Zulu bread pudding- our signature dessert, a moist bread pudding with toasted coconut and rum sauce. Served with fresh berries and whipped cream.

 

·       Mixed berries and cream anglaise- fresh berries, vanilla infused cream anglaise. Topped with a praline crumble.

 

·       White Chocolate Strawberry Cheesecake- creole cream cheese base served by the scoop. White chocolate shavings and Louisiana strawberries.

 

·       Bananas Foster- served warm over a scoop of vanilla bean ice cream.

 

·       Chickory Pot de Crème- chickory coffee infused custard. Topped with whipped cream and chocolate shavings.

EXECUTIVE CHEF/PARTNER
Originally from Louisiana, I spent my childhood in Kenner, La, a suburb of New Orleans.  I now reside in Texas and I am excited to bring my culinary dishes to the Pearland area.
